Brown Banana + Maple Sourdough Muffins
I came up with this recipe while starting at my bananas that were quickly coming to their end. Bananas are one of my favorite ingredients to bake with becomes of their texture, versatility and sweetness. Mixed with a little maple syrup and some sourdough starter, you're met with light, fluffy and slightly sweet muffins to spread some butter or cream cheese on.
butter or coconut oil for coating the pan
2 overripe bananas
1/2 C maple syrup
1 1/2 t vanilla extract
100 grams (1/2 C) bubbly active starter
250g (2 C all purpose flour)
1 1/2 ts baking soda
1/4 tsp sea salt
1/2 C oil (neutral flavor)
1/4 C milk of choice
+set oven to 350, coat muffin tins with butter
+add bananas, maple syrup and vanilla to a bowl and mix with an electric mixer or stand mixer with paddle attachment, about a minute
+add eggs one at a time, then the starter
+in a separate bowl, mix the flour, baking soda and salt and add to mixer in batches.
+Now we add the oil and milk to achieve a soft texture. Just mix to combine
+pour about 1/2-1/3 c batter into each tin
+bake for around 30 minutes, until golden brown or until a toothpick comes out clean when inserted. Let cool at least 20 minutes
A Little Love Note
Get the little ones involved by having them peel and mash the bananas. Foxen likes to help add ingredients with me and even helps with the mixer a little bit. My only advice here mamas, is to welcome the mess. Welcome spills and splashed and stay calm, even celebrate it a little. Have a wet rag nearby for easy clean up. Messes happen all the time, right? It’s how we respond to them.
