Friday Night Fermented Pizza

Most things are constant and routine for my family. My favorite one is Friday Night Pizza Night! Every time I read that I instantly hear Foxen shouting, "Pizza Night!" IT truly is the most fun to get him involved and have him in the kitchen with me. Every Friday morning, we huddle shoulder to shoulder in the kitchen and we begin by gathering all our ingredients, the measuring cups and spoons and the bowl, and we get to mixing, all while chatting and making memories together. And when it's done baking, we eat picnic style on a sea of blankets and pick out a movie. The simple things truly are my favorite. 


1 cup active and bubbly starter

1 cup warm water

2 1/2 cups flour

1 tsp sugar

2 T olive oil 

1/4 tsp salt 

2 tsp herbs de provence

mix all ingredients by hand, cover with plastic or beeswax wrap and let rest for 6-8 hours. 

About an hour before you're ready to eat (you want to make sure you're giving yourself time for rolling, toppings and letting it cool) coax your dough out on a very floured surface and form into a ball. If it feels sticky just sprinkle on some flour and have faith! Once you have a ball, roll out in a circle slightly smaller than your cast iron or pan, it will stretch when you transfer it. Add toppings and and bake at 450 for 20-25 minutes. Let cool for 10 minutes and enjoy!
